If you’ve been on my Instagram then you’ll know I’ve got more limes than I know what to do with. With summer well underway, if the 36+ degree weather hasn’t clued you in – the abundant sunshine should have, instead of making some lemonade well Limeade with my limes I went for a slightly different route. Mojitos! While I love the good ol’ classic mojito I was in a bit of a predicament since we were out of Tequila and Ice; so I put my creative hat on and made do with what I had on hand. The best thing in life are the ones you don’t expect right? Well this frozen watermelon-y goodness is making my month.
To make this you’ll need:
- Frozen Watermelon (I freeze in season fruit whenever I make food-buy)
- 1 tsp Brown Sugar (per serving)
- Juice of 1 lime (per serving)
- 12 Mint leaves (per serving)
- 1 shot Cachaca (you can also use Tequila or a Light Rum, even Vodka would work)
- Soda Water
You’ll also need a blender (or you can crush the frozen watermelon by hand with a mallet), glasses, a teaspoon and a wooden spoon.
Measure out your sugar into the glasses you’ll use, if you go for a highball like me for sipping these poolside double the serving, or use a low ball glass for a more moderate serving. Add in your lime juice – I use a juicer for this, and mix with the sugar until it’s dissolved. Grab your mint and add it in using the handle of the wooden spoon muddle the mint leaves to release the flavour. Measure out your Cachaca and add to the lime-mint-sugar. In a blender crush the frozen watermelon like you would ice , then add it in to the glass fill it 3/4 of the way – don’t mix them just yet. Top off the glass with soda water, stick in a straw and give it a mix. Garnish with a bit more mint or a slice of lime and enjoy.
